Grill your veggies while you prep your salad!
8 - 10 minutes
Drizzled olive oil in a skillet, heat on medium heat. Add chopped onion first for two minutes, add all other veggies to saute' for about 5 more minutes. Don't forget to add your favorite seasonings! (mine are chipotle seasoning, himalayan salt and pepper).
Add all veggies together, toss and drizzle with red wine vinegar. (Add himalayan salt and pepper to taste)
