Ultimate French Onion Soup

  • 1 Large Yellow Onion
  • 1 Package of Portabella or Crimini Mushrooms
  • Fresh Garlic Chopped
  • 1 bunch of green onions - chopped
  • 16 ounces of bone (or vegetable broth)
  • Dash of Chili Oil
  • 1 TBSP Olive Oil
  • Dash of Brown Sugar
  • 8 ounces of Gruyere Cheese (Shredded)
  • Croutons
  • Directions

    • Heat saucepan, add oil, brown sugar to saute and caramelize the onions and mushrooms.
    • While the onions and mushrooms are cooking, heat broth in a pan, adding all ingredients. 
    • Once the onions and mushrooms are cooked, add to the broth mixture, heat together for 10 minutes before serving. 
    • Top with croutons and gruyere cheese. Cover with foil to entirely melt the cheese.
