Summertime Avocado, Corn and Bean Salsa

Ingredients

  • 16 oz corn 
  • 1 16 oz black beans
  • 30-40 cherry tomatoes 
  • 1/4 - 1/2 cup cilantro, chopped
  • 2 avocados, diced
  • 1/2 red onion, finely chopped
  • 1 lemon. juiced
  • 1 lime, juiced 
  • Himalayan salt and pepper to taste

Optional 

  • 2 tsp cumin

Directions

Prep all the veggie ingredients and add them to a large serving bowl. Toss gently to coat evenly and let rest about 10 minutes. Store in the fridge. 

Notes

Serve alone as a side, or with rice crackers for an appetizer or pair with protein for a meal! You've got options :)
