Spaghetti Squash

                1 Spaghetti Squash

                ¼ Red PepperChopped

                ¼ Red OnionChopped

                ½ c. Mushrooms

                1-2 lbs of Boneless Skinless Chicken


                Italian Parsley

                Olive Oil

                Himalayan Salt


Preheat oven to 375 degrees. Slice the spaghetti squash in half,spoon out the inside (like you would a pumpkin). Drizzle the inside of the spaghetti squash with olive oil, himalayan salt and pepper. Cook in oven for 30-40 minutes.

While the squash is cooking, dice up your veggies and chicken, stir-fry together with your favorite seasonings.

Once the squash is cooked, spoon out the cooked squash, add to stir-fry and enjoy!
