Shrimp & Veggie Stirfry

Ingredients

  • 2 pounds medium shrimp (peeled and de-veined)
  • 1 tbsp olive oil
  • 1 tbsp sesame oil
  • 1/2 cup chicken broth 
  • 2 tablespoons soy sauce
  • 3 cup broccoli 
  • 1 tbsp sesame seeds
  • 2 green onion, thinly sliced
  • 1/2 cup red or yellow pepper
  • 1/2 cup mushrooms
  • 1 cup zucchini or squash 
  • 1 orange (juiced)
  • 1 tbsp garlic chopped 

Directions

  1. In a small bowl, whisk together broth, orange juice, soy sauce, set aside.
  2. Heat olive and sesame oil in wok or large nonstick skillet over medium-high heat. Add shrimp for 2 minutes. 
  3. Add garlic for about 2 more minutes. Transfer to plate.
  4. Add vegetables and cook, stirring, until heated through, about 3 minutes. 
  5. Stir sauce and add to the pan with vegetables, about 2 minutes. 
  6. Return shrimp to pan and toss to coat, top with sesame seeds.
  7. Enjoy! 

Notes

You can enjoy this dish by itself or serve on top of brown rice, quinoa, couscous or rice noodles!
