Ingredients

4 pounds of shrimp 

2 Zucchini's (Large - Yellow & Red) 

2 tablespoons of blackened seasoning 

1 Yellow Onion

Salt & Pepper to taste

2 tablespoons of olive oil

Directions

Rinse and cut zucchini and onion. Add oil to skillet, add vegetables start cooking on medium heat. Rinse Shrimp. Season with blackened seasoning add to the skillet, cook for about 8 - 10 minutes until the shrimp is cooked through. Enjoy on it own or add a starch of your choice. 


Notes

Side: Serve on top of a potato for a hearty meal!
