Oven-Roasted Veggie Bowl

Prep Time

15-20 minutes


  • 1 large sweet potato, chopped into 1/2-inch pieces
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 cups Brussels sprouts, cut in half
  • 1/2 red onion, sliced
  • 1-2 tablespoons olive oil
  • 3 cups chopped kale
  • Salt and black pepper, to taste

Preheat oven to 375. Chop all veggies. Lightly coat a baking sheet, toss the veggies in the Lemon Garlic Tahini Dressing. Cook for 45 minutes. Enjoy! 


Optional: Add protein of choice, pork, chicken, shrimp, steak or fish.
