Prep Notes

I try to use Organic whenever possible. Have fun with this recipe, make it yours!

Variations include adding flax seed, dried cranberries, any type of nuts, honey or agave, even dark cacao chocolate for a yummy kick!  You can shape them into balls and use parchment paper so they don’t stick.

Cooking Time

7-9 Nutballs

  • 3 tbls of coconut
  • 2 TBSP of tart cherries
  • 2 TBSP of chia seed
  • 1/2 cup of dates
  • 1/4 - 1/2 cup of nuts (Pick two of your favorites! Cashews & almonds, walnuts, pecans, etc.)
  • Drizzle of honey or agave
NOTE: Depending on your taste buds, feel free to to increase or decrease the total amount of nuts.

  • Combine all ingredients, pulse together for a few times or until it appears like everything has been broken down. You may need to add more dates if the batch is a little powdery. (It should look “chewy” for lack of a better word!)
  • Roll mixture into balls, place in container, place in refrigerator.

Eat as a snack, on the run or while doing errands when that dreadful hunger pang hits and you are mid-shopping. They last all day in a little snack bag or container to throw in your bag on the way out the door.
