Hoki (white fish) w Arugula, Parsley and Rice

I like to cook the fish on foil for easy clean up!

Ingredients

  • 2 (4 -5 oz.) Hoki filets
  • Chili powder
  • Brown rice, 1/2 cup 
  • Vegetable broth, 1 cup 
  • Arugula, 2 cups
  • Parsley, 1/4 cup chopped 
  • Sriracha 

Marinade: 

  • 2 lemons, juiced
  • 1 orange juiced
  • Ginger root, 1" chunk, chopped 
  • 1/4 cup rice vinegar 
  • 1 tbsp olive oil

Directions

HOKI - In a bowl, mix all ingredients listed for the marinade together. Add fish and let it sit for at least 30 minutes. Preheat oven to 375 degrees, cook for 10-12 minutes in the marinade. 

BROWN RICE - Add broth and rice to a pan, bring to a boil, let simmer for 20 - 30 minutes with the lid on. 

FINALE PLATE - Place rice on plate, top with arugula, fish, chili powder, drizzle sriracha and parsley.
