Cucumber, Tomato & Avocado Salad

Ingredients

  • 2 medium cucumbers, peeled and thinly sliced
  • 2 cups grape or cherry tomatoes, slice in half lengthwise
  • 2 tablespoons balsamic vinegar
  • 1/2 red onion, thinly sliced 
  • 1/2 cup kalamata olives 
  • 1 avocado 
  • 1/2 cup of celery, chopped (optional 
  • 1/4 teaspoon black pepper
  • 1 lemon, juice and squeezed
  • Himalayan or sea salt to taste
  • 1 tablespoon extra-virgin olive oil (optional) 

Directions

In a large salad bowl combine all ingredients. Toss and coat evenly. Serve immediately and refrigerate the rest for a cold snack later in the week!
