1/4 - 1/2 cup apple cider vinegar
1 cup plain yogurt
1/4 cup honey
2 teaspoons kosher salt
1 lemon, (squeezed)
1 teaspoon freshly ground black pepper
1 medium cabbage, cored, finely shredded
2 large carrots, peeled
1/4 cup chopped walnuts
1 bunch scallions
In a medium bowl, combine all the dressing ingredients together until well blended. Set aside.
Prepare the salad. In a large bowl, combine the cabbage, carrots, scallions and walnuts. Pour in the reserved dressing and toss until well blended.
Refrigerate at least 1 hour and mix before serving.
